Welcome to Cooking For Amici

I'm a Brooklyn based chef and baker who enjoys sharing my recipes and kitchen antics with anyone and everyone. I've been working in the NYC hospitality scene for the past 6 years, which has grown my love of hosting, food, and beverage. Cookingforamici is my opportunity to put my recipes on paper and spread my love of cooking further than just the walls of my apartment.

Malaysian food offers such a wide array of flavors, textures, and cuisines, and it really makes Malaysia a food destination for anyone who is searching to try a wide variety of foods in one country. But the overarching theme within Malaysian cuisine that I saw was that although the root of the food might come from a different country, over time it has evolved into something uniquely Malaysian, which I think sets it apart from the rest of south east Asia. Mixture of Malay, Indian, Chinese Hokkien, and the diaspora makes Malaysia a treat to eat. My substack recap will be up soon focusing on why I don’t find it necessary to seek out only the best and highly reviews restaurants. I have strong opinions on this lol

Some current eats in Saigon 🇻🇳

Everything here is so sweet and sour and saucy. Also there such an emphasis on fresh greens and herbs, that often just sit in communal baskets or platters in the center of shared tables. Loveeee squat eating in squat chairs. I’m exited to see the differences in cuisine when I head more north and to Hanoi next week.

2) Bò kho (beef rib stew)
3)Bún mắm (fish soup)
4) gạo lứt and quả vả (clay pot brown rice and Vietnamese fig stew)

- whimsical crudite and dips like hummus, roasted carrot pepper, and whipped ricotta
-kimchi risotto arancini
-sourdough focaccia with selected meats and cheese
-elote salad
-smashed cucumber salad
-potato onion frittata (not pictured)
-birthday cake
-cantaloupe spritzes

I don’t make duck that often so this came out just a little over done but it was still tender and delicious. Served with cherry mustard sauce and broccoli rabe sautéed in the rendered duck fat. Honestly pretty quick to throw together :)) happy weekend ☀️

Homemade labneh and pita from last nights pre dinner nibbles. For mains I made shish taouk, batata harra, and fattoush.
These past two weeks I’ve really been into making homemade yogurt so I decided to make some labneh for my friend Reema who was just getting back from a cross country roadtrip. She endured my yappage on the phone all week about my culture adventure (get it?… culture… yogurt) so why not make her a welcome meal back to the city, featuring the cultures in question? I’ve come out of these past two weeks pleasantly surprised with how easy it is to make yogurt, and how satisfying it is to purposely curdle something. Plus you get to control the quality and fat content of the milk, and all you need is some milk and just a little bit of leftover yogurt. The secret is out, Luca is here and he’s stealing your culture 🦠
